The Department of Health and Mental Hygiene can routinely ask during their inspection if the food you have is safe to serve at your default holding temperature. Are Colson products safe to serve at room temperature within our suggested time frame of shelf stability? The short answer is YES, and we have the science to back this up.
We followed the road map presented by a Report of the Institute of Food Technologists (see page 13) for the Food and Drug Administration (FDA) of the US Department of Health and Human Services to determine if an item is a Temperature Controlled Substance (TCS), or Non-TCS (safe to serve from room temp), largely determined by a combination of water activity and pH factors.
We sent our products to ALS Global’s lab for their Food Safety and Quality Testing services to ensure they are within the limits of what’s safe fro consumption. We cross-referenced the lab results with the American Bakers Association which uses <100,000 CFU (Colony Forming Unit) at the end of the shelf life as their acceptable plate count limit; our products are under that by a factor of 100.
