A confection of pâte à choux, puff pastry, pistachio mousse, and spun sugar, our take on this traditional pastry is a mix of several patisserie techniques. The base of puff pastry is ringed with pâte à choux (eggy eclair dough), filled with mousse (in our case, luxurious pistachio), and topped with cream puffs dipped in caramelized sugar. We’re offering it in two sizes — an ‘eclair’ serving just for Mom or a 5″ x 8″ shape for the whole family.
