Colson Patisserie’s rugelach are delightful little crescents of flaky pastry dough made with cream cheese and rolled with nuts, sugar, and apricot jam. Resembling a small, dense, croissant, rugelach originated in Hungary, gained popularity in Europe, and were adapted in America. The term ‘rugalech’ comes from the Yiddish word ‘rugel’ meaning ‘royal,’ which appropriately describes the carefully rolled pastry that reveals sweet, rich flavors between its layers of cream cheese dough.

Colson Patisserie’s take on the classic confection is a small, round cookie with a generous foundation of chocolate ganache at its base. The almond flour creates a cloud-like cake that is slightly caramelized around the the edges with sugar, and melds beautifully with the dark chocolate on bottom.
