Legend has it that the pastries were invented by a baker whose shop was on the Rue St.-Denis, near the Bourse, the financial district in Paris. Colson Patisserie’s take on the classic confection is a small, round cookie with a generous foundation of chocolate ganache at its base. The almond flour creates a cloud-like cake that is slightly caramelized around the the edges with sugar, and melds beautifully with the dark chocolate on bottom.
